Orange Sun  Tea 

 

This is not necessarily made from Orange Pekoe Tea but it could be if you prefer.

Ingredients:

2 Family size bags of your favorite tea

3 rings from the blossom end of a Hamlin, Navel or Page orange. (The blossom end is the end opposite of the stem -Sweeter)

4 Fresh mint leaves rubbed together between your fingers

2 fresh cloves not ground.

Add these ingredients together in a clear gallon (4 quart) jar (if using an old pickle jar be sure there is no lingering smell of pickles in it), Set this in the direct sun for 1 hour and then out of the sun for 1 hour. Strain the tea into a serving pitcher. Either serve over ice in a glass or add ice and stir vigorously and then strain into chilled glasses. Slit a fresh orange ring and hang it over the side as garnish. You may substitute the orange with lemon or green Persian Lime but add these only after the tea has brewed.

If you would like to sweeten the tea you may do so by adding  a sugar substitute (bite my tongue) or 1 1/2 cups of sugar +/- to taste, 10 minutes before serving to allow it to fully dissolve. Or you may wish to use honey as part of the sweetening but not for all of it as it will overpower the other flavors.
