Dad's Hash

A complete meal

Time required: About 25-30 minutes possibly less (Maybe not the first time  but by the second time you  will be able to)

Ingredients:

2 pounds of frozen ground beef but must have some fat content.
1 medium onion  - sliced and diced (Some of each)
1/2 green pepper - chopped
2 sticks of celery - chopped
1/2 cup of each of these and they may be either fresh or leftovers: corn,  peas. lima beans or alternate or just about any leftover veggies that you may have.
3  medium potatoes
3 cups of water
1 stick of butter or margarine equivalent
1/2 cup of milk
2 tsp of salt 1 + 1
1/2 tsp black pepper
2 tbsp of cooking oil
3 heaping tablespoons of flour

Wash and cut the potatoes into 8 pieces each. Put the water on to boil in a 2 quart pan. 
Heat a heavy skillet on the stove then add the oil and the frozen ground beef (Hamburger meat). Allow the meat to sit until the bottom side is lightly brown then turn it over and while holding it with a fork peel the thawed layer off by scraping it with a metal spatula (egg turner). This should give you strips of meat and not crumbs. 
By now your water should be boiling. Add 1 tsp of salt   then your potatoes. You are going to boil these until you can stick them with a fork and they will slide off.

Continue turning and scraping the the meat while checking the potatoes.  When all the meat is thawed and peeled, then sprinkle 1 tsp of salt and the pepper evenly over the meat. Allow it to brown a little deeper but not to the point of becoming crisp. 
The potatoes should be boiled and you will want to drain and save the water.  Mash your potatoes while adding the margarine or butter and the milk.

Add in all the Veggies and only the sliced onions. Stir from time to time until veggies are hot and almost cooked. now add the chopped onions and about 1 1/2 cups of your potato water. Let it simmer  2 minutes. Put your flour in an empty jar and add either 2 oz of potato water  (if it is not too hot) or tap water., put the lid on and shake until all the lumps are dissolved. (about 1-2 minutes). Turn off the heat on the skillet and allow it cool for one minute then pour in the flour mixture while stirring. Turn on the heat and simmer until the flour has thickened and then an additional 2 minutes to cook the flour, stirring all the while.

Now you can either serve this over some of the mashed potatoes on each plate, or with the potatoes on the side. Some warmed bread with butter will help stretch this if necessary.
