Cream of  Turkey Soup

When you have finished your Thanksgiving  or Christmas  Dinner then you have to make good use of those leftover we suggest the following recipe for at least one meal.

Ingredients:
1 quart turkey broth
1 cup chopped turkey meat
1 cup heavy cream
1/4 teaspoon salt (about)
1/8 teaspoon white pepper
1/8 teaspoon nutmeg or mace
2 tablespoons of diced onion or chives
1 tablespoon minced parsley 

Instructions

Optional: Place a 2 tablespoons of broth in the bottom of a 2 quart sauce pan, place over high flame until bottom of pan is browned.
Regular: Bring balance of broth and turkey meat to a simmer and slowly mix in cream. Add salt to taste, pepper, onion and nutmeg. Cover and let mellow over lowest heat about 10 minutes. Serve hot or icy cold, topped with minced parsley.
